Brussel Sprout Salad


Easy to make and enjoy, this is a tasty and simple salad to switch up your greens! Keep the dressing in the fridge for multiple meals. Add your favorite dried fruit for extra zing.


Salad Ingredients:

1 1/2 pounds Brussels Sprouts

1/2 cup pistachios


Dressing Ingredients:

1/2 sweet apple, peeled and chopped

1/2 shallot, minced

1 1/2 teaspoons Dijon mustard

3 tablespoons olive oil

1 1/2 tablespoons apple cider vinegar

1 1/2 teaspoons lemon juice


Directions:

Cut the ends off of each sprout and slice thinly to make shreds. Wash and dry the sprouts.


Place all dressing ingredients into a blender and blend until smooth.


Combine salad ingredients and dressing and enjoy!
